Vegan Gluten-Free Sandwich Bread, 3 Ingredients Only!

I'm SO excited for you all to try this vegan bread recipe! It's gluten free, yeast-free, oil-free, made from only three ingredients, great for sandwiches and even better as avocado toast or french toast. Since going gluten-free many years ago, I’ve truly missed bread so much.

Trying to find gluten-free bread in the grocery store that is also vegan, isn't packed with filler ingredients and also tastes good is almost impossible. There are tons of great seed breads out there, but I was missing the soft, fluffy sandwich bread that I used to eat as a kid. This is seriously the real deal. I have FINALLY perfected this recipe and know you will love it just as much as my friends and family have been. To top it off, it’s high in protein because of the chickpea flour and it's only 3 ingredients!

You will need:

  • 1.5 cups chickpea flour

  • 1.25 cups almond flour

  • 1 Tablespoon baking powder

  • 1.75 cups water

  • sea salt + dried rosemary for the top

Method:

  1. Preheat your oven to 400F.

  2. Add the chickpea flour, almond flour, baking powder and water to a bowl plus a sprinkle of sea salt. Whisk really well to combine. Make sure there are no clumps!

  3. Line a loaf pan with parchment and poor the mixture into the pan.

  4. Top with lots of dried rosemary and sea salt

  5. Bake for about 40 minutes. You can stick a toothpick in it to make sure nothing sticks to it to make sure it’s done. It depends how deep you loaf pan is.

  6. Remove from loaf pan and let cool for 15-20 minutes.

  7. Slice and enjoy with avocado, vegan butter, as a loaded veggie sandwich, with almond butter + hemp heart + fresh strawberries or alongside a salad!
