Healthy Bolognese

A true Italian classic with a healthy twist! I have always loved Bolognese, but I often felt bloated and tired after eating it. This version is both hearty and meaty like the traditional comfort classic, but will nourish and fuel your body and soul to make you feel good. It’s packed with so much flavour, you’re going to want to make this a weekly staple in your house! It’s also super versatile as you can swap the beef for turkey or chicken, use any type of noodles and vegetables you have on hand.

Ingredients:

  • 1lb grass-finished beef (I use p.h. farm in British Columbia) or organic ground turkey or chicken

  • 3-4 cups chopped veg: I used mushrooms, shallots + zucchini (peppers would be great too)

  • 2 garlic cloves, minced

  • 1/2 cup dry lentils. I used organic green.

  • Noodles - I use nuPasta or Liviva. I like them because the ground meat and lentils make it very hearty so the noodles still provide fibre and make it filling, whereas lentil or chickpea noodles may make it too heavy, however, you could definitely use them if that’s what you like! You could also use palmini noodles.

  • RAO’s tomato sauce

  • Fresh herbs: oregano + basil

  • Extra Virgin Olive Oil

  • Sea salt + pepper

Method:

  1. Cook meat with garlic until done and set aside.

  2. Cook lentils and drain.

  3. Add veggies to pan on medium heat, add a splash of water and let cook for a few minutes. Once water has absorbed, turn down heat slightly and add about a Tablespoon of olive oil and let cook until desired doneness.

  4. Add meat, lentils, tomato sauce, noodles and veggies to pan on low until heated through.

  5. Top with fresh herbs, sea salt, pepper and optional parmesan cheese
