Cauliflower Rice Paella

A true Spanish classic dish that is perfect for an delicious and easy weekday lunch or dinner option! I remade this dish over with a grain-free option using cauliflower in place of rice or do half + half! I love it because you can pretty much use any veg you have on hand, can switch the protein or make it vegan, do half rice half cauliflower or make it lighter with the cauliflower rice. So many variations!

Ingredients:

  • 1.5 Tbsp extra virgin olive oil

  • 1 small white onion, diced

  • 1 small red + green bell pepper, diced

  • 1/2 fennel head, thinly sliced then diced

  • 1 regular sized cauliflower, riced (remove stems and ‘pulse’ in blender or buy caul rice frozen)

  • 1 cup mushrooms, I used oyster

  • 1 large clove garlic, minced

  • 1 Tbsp organic chicken or veg broth paste

  • 1 tsp paprika

  • 1 Tbsp chilli flakes

  • 1/2 tsp cayenne pepper

  • 1 tsp turmeric (I use Matcha Kari)

  • sea salt + pepper to taste

  • 1 cup organic frozen peas

  • 1 cup frozen green beans

  • 1/2 cup organic diced tomatoes

  • 1 can artichoke hearts in water, drained + roughly chopped

  • optional 1 cup cooked white or brown rice to bulk it up a little more

    Garnish: green olives, halved, capers, cilantro or more parlsey, avocado, squeeze lemon

Method:

  1. In a large skillet or ceramic baking dish (I used baking dish because that’s what I have on hand), warm olive oil, onion, fennel, mushrooms + peppers on low/medium heat for 5 minutes.

  2. Add in garlic, prawns, cauliflower rice, chicken or veg broth paste, beans, peas, and spices and cover and let cook for another 5 mins.

  3. Add in tomatoes and artichokes, let heat through for another few mins.

  4. Server with any of the garnish and enjoy!

I also love to add in chicken and/or use half and half rice with the cauliflower rice! Make a big batch and freeze for the week.
