Somethin’ Sweet

You know when you just NEED that little bit of somethin’ sweet'? I sure know I do. I have always had the biggest sweet tooth.

Black Bean Brownies

Ingredients

  • 2 cups black beans (soaked is best for optimal digestion)

  • 1.5 cups chopped zucchini

  • 1 cup raw cacao powder

  • 1 cup monk fruit sweetener (can sub for stevia or coconut sugar)

  • 2 Tbsp maple syrup

  • 1/2 cup coconut milk (can sub for any non dairy milk)

  • 1 cup Chocolate Vegan Protein Powder (I use Nuzest)

  • 3 Tbsp flax seed + 3/4 cup water to make flax egg (mix together + let sit for 5 minutes to create a gel)

Method:

  1. Preheat oven to 375

  2. Blend all ingredients together (you may need to stop the blender and scrape down the sides a few times. The dough is thick! If you need to you can add a few splashes of coconut milk when blending)

  3. Add mixture to a lightly oiled baking dish (I used about 1 tsp of coconut oil)

  4. Bake for 40- 45 minutes depending on the thickness

  5. Let cool and enjoy!

    *optional add ins: peppermint extract, walnuts, raw cacao nibs or dairy free chocolate chips, or drizzle any nut butter on top (I used almond butter in the photo - so so good!

    *these are great when warm but I love the texture of them once they are chilled in the fridge so they are almost fudge-like!

Cookie Dough Protein Balls

Banana Power Cookies

Ingredients

  • 2 ripe bananas

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup tart cherries

  • 1/3 cup goji berries

  • ground flax seed

  • chia seeds

  • sunflower and pumpkin seeds

  • cinnamon

  • gluten free organic oats

  • medjool dates

  • vanilla

  • raw cacao nibs or dairy free chocolate chips

  • hemp seeds

Method

  1. Preheat the oven to 350F and lightly oil a baking sheet with coconut oil

  2. Remove pits from dates and add to blender. Add about 1/4 cup water and blend to make a paste. If you don’t have a blender you can easily pop the dates + water in a pan to cook down on the stove

  3. Add bananas to mixing bowl and mash with fork

  4. Add the rest of the ingredients to form a dough

  5. The dough should be thick and a little sticky, but you should easily be able to make about 10 cookies

  6. Bake for 4-5 minutes each side (8-10 minutes total depending on cookie size)

    *These are best kept in the fridge for up to 1 week or freezer for up to 1 month

Matcha Coconut Energy Balls

Ingredients

  • 8 Medjool dates

  • 1 Tbsp pure vanilla

  • 1.5 tsp cinnamon

  • 3/4 cup almond butter

  • 2.5 Tbsp organic Matcha powder

  • 1 cup Vanilla Vegan Protein Powder with greens (you can’t taste the greens at all)

  • 1 cup shredded unsweetened coconut

  • 1.5 cups organic gluten free rolled oats

  • 3 Tbsp hemp seeds

  • 3 Tbsp sesame seeds

    *optional” 1/3 cup collagen powder (I use WithInUs TruMarine)

Method:

  1. Remove the pits from the dates and add to blender with 1.25 cups warm-hot water and blend on high to form a paste for about 15 seconds

  2. Pour the mixture into a bowl and add all the ingredients except the hemp + sesame seeds - mix well to form a dough

  3. Add the hemp + sesame seeds to a small bowl

  4. Roll into small balls then roll in the seeds + enjoy!

    *these stay best in the fridge for about 5 days or the freezer for up to 1 month
